THE DEEPEST EXPRESSION
What if midnight had a taste ?
SEVENTY ONE’s first new expression since launch, born from Mert Alas’s fascination with midnight and five years of devotion to a deeper expression of botanicals and dark wood.
First chapter, limited to 3,000 bottles worldwide.
“For as long as I can remember, I have been fascinated by the night. Not because of its darkness, but because of what it changes. Beauty becomes more striking. Creativity becomes fearless. Familiar places begin to feel unfamiliar. Everything feels richer. More intense. More ecstatic.”
Midnight is where that transformation is most concentrated: the moment the familiar loosens its hold and the night opens into possibility.
Eau de Minuit captures that moment.
“I wasn’t interested in creating something simply because it was new. I wanted to discover whether one moment could transform the spirit without changing its soul.”
A DECADE OF EXPLORATION
FIVE YEARS OF DEVOTION
For a decade, SEVENTY ONE has studied how botanicals, wood and time can push gin further, building one of the largest libraries of gin-in-cask in the world.
For the past five years, that knowledge has been devoted to Eau de Minuit. Working alongside Master Distiller Steve Wilson, Mert Alas explored how oak could bring greater depth, structure and texture while preserving the botanical identity of the spirit.
A STUDY
OF CASKS
Three dark oaks. One expression.
EAU DE MINUIT IS SHAPED THROUGH THREE DISTINCT CASKS, EACH SELECTED TO BRING A DIFFERENT DIMENSION TO THE SPIRIT. FROM DEPTH AND STRUCTURE TO REFINEMENT AND RICHNESS, EACH OAK CONTRIBUTES ITS OWN CHARACTER — COMBINED TO CREATE ONE DISTINCT EXPRESSION.
Pyrenean Black
OakSelected for its depth and grip. This native Iberian oak gives Eau de Minuit its structure and midnight warmth — where botanicals meet black spice, toasted wood and dark fruit.
Vosges French
OakSelected for its fine grain and length. Bringing polished depth and cellar warmth — where botanicals meet prune, tobacco, soft spice and refined tannins.
American
OakSelected for its generosity and roundness. Bringing a smoother texture and luminous richness — where botanicals meet vanillin, toasted almond and cream.
Together, the three woods create a deeper golden hue, richer texture and longer finish, while preserving the botanical clarity of SEVENTY ONE.
KEPT IN MOTION
While the spirit rests, the casks are turned to deepen the exchange between botanical and wood while preserving botanical clarity.
The movement increases contact with the oak’s inner surface, contributing to Eau de Minuit’s colour, texture and depth.
THE TASTE OF
MIDNIGHT
Dark fruit, leather and tobacco give way to hazelnut, cacao and toasted oak. A velvet texture, refined roundness and a long finish.
Characteristics never before seen, felt or tasted in gin. An ode to the most beautiful, mysterious and ecstatic hour of the night.
DARK FRUITPrune and dark fruit. Richness unfolding between sweetness and depth.
LEATHER ANDTOBACCOWorn leather. Dry tobacco. The scent of somewhere you have been, but cannot quite place.
HAZELNUTAND CACAOHazelnut and cacao unfold beneath a velvet texture. Warmth, roundness and length.
TOASTEDOAKToasted wood. A lingering depth that carries the finish.
A RITUAL FOR THE NIGHT
The deepest expression of SEVENTY ONE. Textured. Layered. A darker expression of the same vision.
